We’re thinking that’s what we’ll have tonight and we don’t have a recipe we’re committed to.

Gulaschsoup

250g stewing beef in cubes or gulasch
50g bacon, 2 Tbsp oil
2-3 onions
1 garlic clove
2 tsp paprika
cayenne pepper (optional)
4 Tbsp red wine
salt, pepper, majoran, thyme
1 Tbsp tomato paste
1 litre bouillon or water
1-2 potatoes
1 Tbsp flour or cornstarch

Cut meat in very (very) small cubes.
Cut bacon in small slices or cubes and fry in oil.
Fry the small cut onion and garlic in the oil until it is golden brown.
Season it with paprika, stir it and add 2 Tbsp water.
Add the meat and braise it.
Add red wine, the spices and herbs, the tomato paste and fill it up with liquid.
Cook it covered for about 1-1 ½ hours at low temperature.
About 15 minutes before it is finished add the small cut potatoes.
When finished add the flour or starch to thicken the soup a little.

For American Goulash. I tweak this recipe though: I dice up 2-3 celery stalks and saute with the onion and garlic. I use a 32 oz box of Swanson's Beef Broth instead of water and I use Hunts diced tomatoes seasoned with garlic, onion and basil. This recipe makes a huge batch. You can halve it if you need too. It's one of hub's favorites, but the kid isn't crazy about it so I don't make it when she's home.

INGREDIENTS
2 pounds Ground Beef 80/20
1 large yellow onion
4 large cloves garlic minced
3 cups water
2 (15-ounce ) canned tomato sauce
2 (14.5-ounce) canned diced tomatoes juice included
3 tablespoons soy sauce
2 tablespoons dried oregano
2 teaspoons dried basil
2 dried bay leaves
1 tablespoon seasoned salt
1/2 teaspoon black pepper
2 cups elbow macaroni uncooked
2 cups cheddar shredded (optional)

INSTRUCTIONS
In a large pot, brown the meat over medium heat, breaking up the meat as it cooks into small pieces. Continue to cook until the meat is cooked through and there's no longer any pink.
Stir in the onions and garlic. Cook, stirring occasionally until the onions are translucent.
Stir in water, tomato sauce, diced tomatoes, soy sauce, oregano, basil, bay leaves, seasoned salt, and black pepper. Bring the mixture to a boil over medium heat. Reduce the heat to low, cover, and simmer 20 minutes, stirring occasionally.
Stir in the pasta, cover, and simmer over low heat, stirring occasionally until the pasta is tender about 25 minutes. Remove from heat, discard bay leaves. To serve, ladle into individual bowls and top with cheddar.

This is very close to the recipe I use.

I don’t personally use a recipe, I just eyeball everything. 2 things goulash needs to be authentic is paprika and caraway seeds.
I’m guessing Wolfgang Puck makes a good one!
