That sounds really good. Do you shred or slice the zucchini then drain or squeeze the water out?
I usually make pizza when we have some leftover pre-cooked vegetables in the fridge. If I don't already have some, I like to thinly slice all the vegetables and saute in olive oil before I put them on the pizza. Much better flavor, and cooks off the moisture.

We had leftover bbq chicken breast from last night s dinner so I just shredded it and let the family put what they want in them, then onto the grill they go.

Yes but with no sauce. I season the chicken but everyone prefers a different sauce so I go plain.

Leftover box noodle goo (which I like) and steamed carrots. My MIL has taken over making dinner for my soon to be ex-husband and the stepson, like she's his damn wife (part of the issue this whole time in this crappy marriage) so I no longer have to cook family meals. ...I'll be free soon.
